History of biryani

Ingredients:

  •   500g mutton 
  •     1 cup yogurt
  •     1 tablespoon ginger-garlic paste
  •     1 teaspoon red chili powder
  •     1/2 teaspoon turmeric powder
  •     1 teaspoon garam masala powder
  •     1 teaspoon coriander powder
  •     1/2 teaspoon cumin powder
  •     Salt to taste
  • For the rice:
  •     2 cups basmati rice (washed and soaked for 30 minutes)
  •     4 cups water
  •     2-3 green cardamoms
  •     1 cinnamon stick
  •     4-5 cloves
  •     Salt to taste
  • For assembling the biryani:
  •     2 onions (for birista)
  •     1 tablespoon ghee 
  •     1 tablespoon oil
  •     1/2 cup milk 
  •      2 green chilies (slit)

Instruction:

Marinate the mutton pieces for at least 2 hours.

a large pot add ghee and oil.the cloves, cinnamon stick, bay leaf, and cardamom pod. Fry for a few seconds until fragrant.

Add the sliced onions to the pot and cook until golden brown.

Now add the marinate mutton with others ingredients.

Add the rice, water, and salt to the pot.
