Ingredients

  • 200g (1 1/4 cups) all-purpose flour
  • 120g (1/2 cup) golden syrup
  • 50g (3 tbsp) vegetable oil
  • 1 tsp alkaline water
  • 400g (2 cups) lotus seed paste
  • 4 salted egg yolks
  • 1 egg yolk
  • 1 tbsp milk

Instructions

  • Prepare the Dough:
    In a bowl, mix golden syrup, vegetable oil, and alkaline water until combined.
    Sift in the flour and mix until it forms a dough. Cover with plastic wrap and let it rest for 1–2 hours.
  • Prepare the Filling:
    Divide lotus seed paste into 50g portions. Flatten each portion and wrap it around a half salted egg yolk (optional). Roll into a smooth ball.
  • Assemble Mooncakes:
    Divide the dough into 25g portions and roll into balls.
    Flatten the dough and wrap it around the filling ball. Seal edges and roll into a smooth sphere.
  • Shape Mooncakes:
    Lightly dust a mooncake mold with flour, place the dough ball inside, and press to form a pattern. Release gently.
  • Bake the Mooncakes:
    Preheat oven to 180°C (350°F). Arrange mooncakes on a baking tray lined with parchment paper.
