Berry Swirl Cheesecake pie

For the berry swirl:

Ingredients:

For the Crust
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
For the filling
  • cream cheese (3 packs) 
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 6 large eggs
  • ½ cup sour cream
  • 1 tbsp all-purpose flour
For the Berry Swirl
  • 1 cup mixed berries( blueberries)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tbsp cornstarch

Instructions:

  • First, crush the Graham cracker crumbs using a high-power rolling pin.
  • Take a mixing bowl and combine the Graham cracker crumbs with 1 tsp of sugar and unsalted butter. Bake for 8 minutes at 325°F (160°C).
  • Now, take a large bowl and mix the cream cheese with sugar. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until well combined.
  • Pour this mixture into the crust and bake for about 60 minutes. Then refrigerate for about 4 hours.
  • Serve each slice with fresh berries.
